Consumption and Policy: The Case of Food

Consumption and Policy: The Case of Food, Andrew Flynn, Natalia Yakovleva, Ken Green and Terry Marsden, looks at the area of consumer choice in two foods, chicken and potatoes.

It argues that retailers, along with producers, manufacturers and processors, and distributors, are involved in creating food choices for consumers. The paper highlights and emphasises the growing importance of private supply chain regulation in helping to modify and structure food choice.
